Ingredients:
Chicken breast (sliced into thin strips)
Veggies of choice (e.g., onion and peppers, sliced)
Extra virgin olive oil
Grated cheese
Sour cream
Fajita seasoning mix
1 ripe avocado
Chili flakes
Salt & pepper
Tortilla wraps
Method:

Prep the Ingredients:
Slice the chicken breast into thin strips. Slice the onion and peppers (and any other veggies you're using). Peel and slice the avocado. -
Season the Chicken:
In a bowl, toss the chicken strips with a drizzle of extra virgin olive oil, a generous sprinkle of the fajita seasoning mix, a pinch of salt, pepper, and a few chili flakes (adjust to your spice level). -
Cook the Chicken:
Heat a large pan or skillet over medium-high heat. Add a little olive oil. Once hot, add the chicken strips and cook for 5–7 minutes, stirring occasionally, until golden and cooked through. Remove and set aside. -
Cook the Veggies:
In the same pan, add a bit more olive oil if needed. Toss in the onions and peppers. Stir-fry for about 4–5 minutes until softened but still a little crisp. -
Warm the Wraps:
Quickly warm the wraps in a dry pan or microwave for a few seconds until soft and pliable. -
Assemble the Fajitas:
Spread a little sour cream onto each wrap. Top with cooked chicken, sautéed veggies, a sprinkle of grated cheese, and slices of avocado. Add extra chili flakes if you like it spicy! -
Wrap and Enjoy:
Roll up your fajitas, tucking in the sides as you go, and enjoy immediately!
For the guac:
- Cut the avocado in half, remove the stone, and scoop the flesh into a small bowl.
- Mash the avocado with a fork until smooth (or leave it a bit chunky if you prefer).
- Season with a pinch of salt, a crack of black pepper, and a sprinkle of chili flakes if you want a bit of a kick.
- Drizzle with a tiny bit of extra virgin olive oil for extra richness (optional).
- Give it a quick stir and it's ready!
